Plastic Cookies Are So Wrong

Plastic cookies are those premade dough cookies you can buy through school fundraisers and at the store. They don’t have that homemade taste. I am not even sure how to explain homemade taste lol. But anyway, it’s cheating and I cheated yesterday.

True to my plan I spent the morning cleaning, wrapping gifts, apple butter making, cookie baking, and I ended up knitting in the evening. Not all of the gifts are wrapped. I ran out of tape when I got down to one kids Santa gifts. Way to go mom, way to plan for plenty of tape! Oh well, that I can work on tonight. As I wrapped I discovered the oldest doesn’t hardly have anything in comparison to the youngest. The middle child has more than oldest but not as much as youngest. So guess what I get to do Mon night? yep, even it out.

The cookies went well. They are premade and premeasured. I just placed them on a cookie sheet and shove in the oven. I felt bad for cheating but it was nice to save the mixing for this weekend with the kids who want to make cookies so bad they are about to explode. I also misread the label of these cookies. I said 24 in each, yea no…..48. I had 3 different kinds and I cooked them all. 12 dozen cookies. And my homemade batches will make around another 4 dozen all together. Guess what the kids are going to eat on the way to Florida???

Apple butter making went so much smoother yesterday. First my mother in law let me borrow her apple corer/parer tapletop clamp thingymajiggy. I want one. Normally it takes me an hour to core, pare, and chop the apples for apple butter, depending on how much I am doing. What I did yesterday would have taken about 30 minutes. But with the thingymajiggy I got done in 15 minutes. And I didn’t chop the apples. I followed my normal recipe and tossed it all into the crockpot. Turned it on high and 4 hours later I used my hand masher to smoosh up the apples. It turned out perfect. Oh man do I love using the crockpot for the apple butter!

After all of that I took an hour nap. It was nice to nap. And when I got up hubs and kids were walking in the door. So I sat an knitted the rest of the night while hubs took care of dinner.

Depending on weather today will depend on what happens. We are supposed to get around 3-6 inches of snow but the school hasn’t been called off yet. It’s not quite 6 am. If it ends up being called off then I may have the kids help me make some cookies today just to keep them occupied. Otherwise I am heading into the office. I hope to have the last scarf done by Sunday night. I don’t think it will take that long but that is my deadline.
